Vegans and DF people fight a fight that most of us can't even understand. A life without CHEESE! What is life without Mac N' Cheese or Tacos? Chef Caleb to the rescue once again! Have you tried our paleo cheddar cheese sauce. It’s rich, it’s creamy, it’s dreamy and it’s dairy-free! You’re probably wondering how we achieve all of this glorious cheesiness without using any dairy products. While the recipe is a secret, I can spill the cheese (see what I did there) a little bit about how we work our magic.
How our Paleo Cheese is Made
The base of our sauce (and many non-dairy cheese substitutes) is nuts. We use cashews because we feel like they give it the creamiest cheese-like texture. We blend them up until they’re super duper smooth and add our own secret blend of herbs and spices. While it’s mainly the combination of our ingredients that come together in cheesy harmony, one of the items that really gives it that cheddary flavor is nutritional yeast. It’s a deactivated form of yeast that is typically sold in a dry powder or flake form. It’s also a good source of B12 and is very popular in vegan cooking. While nutritional yeast is quite a versatile ingredient, our favorite use for it is definitely in our cheese sauce base. From there we an add additional flavors like jalapeno, or smoky bacon to really boost the flavor profile of our “cheesy”
